Green Mini-Burgers

*My kids think these are cool...  All measurements are approximate, so adjust to your family's preferences.

2 lbs grass-fed ground beef
4-5 mushrooms, minced
1 bunch kale, chard, or beet greens- minced
1/4 of an onion- minced
Sea Salt and pepper, to taste

Mix ingredients; form into small, thin, silver-dollar sized hamburgers; fry burgers as you normally would any hamburger.

These are easy to make ahead of time and freeze- either raw and ready to cook, or already cooked and ready to re-heat.
We melt grass-fed, raw cheese on top and eat them with mixed greens, salsa, guacamole, mashed cauliflower, cottage cheese, or asparagus.  They're burgers, so they go with anything!
